Cut pork into 1-inch cubes, trimming off excess fat

Peel and mince garlic

Cut green onions across into thin slices and set aside

Toss pork cubes with garlic, brown sugar, Tequila, molasses, salt and pepper and arrange in a single layer in a deep skillet

Add the water and bring to a simmer. Continue to cook until water is all gone, stirring occasionally

Continue to cook, stirring often to brown pork, about 45 minutes total cooking time. Serve carnitas in warmed corn tortillas with guacamole and green onions.
CARAMELIZED CARNITAS
ingredients
- 1-1/2 pounds boneless pork shoulder
- 2 cloves garlic
- 3 green onions
- 2 tablespoons brown sugar
- 1 tablespoon Tequila
- 1 tablespoon molasses
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 cup water
- 8 corn tortillas
- Guacamole (see page 88)
