Peel garlic

Remove leaves from rosemary stems

With food processor running, drop in garlic cloves and process until minced

Stop machine and add the rosemary, salt and pepper

With machine running slowly add the olive oil and process to form a paste

Trim pork of all fat and silverskin

Rub the garlic paste all over the pork and let stand at room temperature for 30 to 60 minutes

Preheat oven to 375 degrees

Place pork on parchment lined baking sheets and roast for 25 to 30 minutes or until an internal temperature of 155 degrees is reached

Let stand about 7 minutes

Slice on a diagonal and serve.
