Trim ends from jalapenos and slice

Peel garlic

Remove cilantro leaves

Place jalapeno chilies, garlic and cilantro in food processor and pulse to mince well

Add the honey, lime juice and olive oil and process to puree

Trim chicken and cut into 1-inch cubes

Place in a bowl and toss with jalapeno mixture

Let stand for 30 minutes. Thread chicken on bamboo skewers which have been soaked in cold water for 20 minutes

Grill or broil chicken for 4 to 5 minutes per side

Serve with Salsa Fresca or Strawberry Salsa.

ingredients
- 2 jalapeño chilies
- 2 cloves garlic
- 4 sprigs cilantro
- 2 tablespoons honey
- 1/2 cup fresh lime juice
- 1/4 cup olive oil
- 4 large boneless skinless chicken breast halves
- Salsa Fresca (see page 32) or
- Strawberry Salsa (see page 33)
