Cut cilantro off above rubber band, saving both leaves and stems

Peel garlic cloves

Peel ginger and slice

Place cilantro, garlic and ginger in food processor and pulse to mince well

With processor running pour in oil, fish sauce, water, sugar and white pepper. Trim chicken and cut each into four long strips

Place chicken in a bowl and toss with cilantro mixture

Let stand for 30 minutes and then place chicken on bamboo skewers which have soaked in cold water for 20 minutes

Grill or broil chicken for 4 to 5 minutes per side

Serve with Cucumber Salad.
GINGER CHICKEN SATAY
ingredients
- 1 large bunch cilantro
- 1 large head garlic
- 1-inch piece ginger root
- 1/4 cup vegetable oil
- 2 tablespoons water
- 3 tablespoons fish sauce
- 2 tablespoons sugar
- 1/2 teaspoon ground white pepper
- 4 boneless skinless chicken breast halves
- Cucumber Salad (see page 130)
