Soak dried mushrooms in hot water for 30 minutes. Drain, remove stems and thinly slice

Peel and mince the garlic and ginger

Chop shallots and slice chili and onion

Cut bell pepper in julienne strips

Remove cilantro leaves and mince

Heat 1 tablespoon oil in wok and toss in shallots, chili, onions, red pepper and mushrooms

Toss 3 minutes or until tender

Remove to a plate

Add remaining oil and garlic and ginger

Cook 1 minute

Add chicken and toss until cooked through, 4 minutes

Add oyster and fish sauces, sugar and pepper and toss to combine

Toss in cooked vegetables and season to taste

Sprinkle with cilantro to serve.

- 4 dried shiitake mushrooms
- 1 clove garlic
- 2 inch piece ginger root
- 2 shallots
- 1 serrano chili
- 1 onion
- 1/2 red bell pepper
- 2 sprigs fresh cilantro
- 1/2 pound boneless skinless chicken breasts
- 3 tablespoons vegetable oil
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1/2 teaspoon sugar
- Pinch white pepper
