Thinly slice onion lengthwise

Peel and mince garlic

Peel ginger and mince

Stack mint leaves and slice across into thin strips

Remove stems from shiitake mushrooms and slice across into thin slices

Cut green onions in one inch lengths

Cut red pepper in medium julienne

Trim chicken and cut into Batonnet strips

Heat 1 tablespoon oil in wok and cook onions 3 minutes. Add garlic and toss 1 minute

Remove to a bowl

Add remaining oil and chicken; toss 3 minutes

Toss in soy sauce, ginger and mint

Add mushrooms, green onions, red pepper, red pepper flakes and cooked onions and cook until chicken is tender

Add vinegar, sugar and fish sauce. Serve.

- 5 cloves garlic
- 1-1/2 inches fresh ginger root
- 6 sprigs fresh mint
- 8 large shiitake mushrooms
- 5 green onions
- 1/2 red bell pepper
- 1-1/2 pounds boneless skinless chicken breasts
- 3 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1/2 teaspoon crushed red pepper flakes
- 2 tablespoons rice vinegar
- 1 teaspoon sugar
- 2 tablespoons fish sauce
