Cut tomatoes into quarters lengthwise and cut out seeds

Cut into medium dice

Cut the zucchini to medium dice. Finely chop cilantro

Finely chop onion

Peel and mince garlic

Cut corn from cobs

Melt butter in a large skillet and saute the onion for 3 minutes

Add the tomatoes, zucchini, garlic and corn and cook, covered, until zucchini is tender, about 15 minutes

Stir in cream cheese

Trim chicken and pound between two sheets of plastic wrap to an even 1/2-inch thickness

Melt pepper jelly and stir in lime juice and chili powder

Divide in half, setting one aside

Brush chicken with half the jelly and grill 4 minutes per side

- 4 teaspoons fresh lime juice
- 1/2 teaspoon chili powder
- 4 boneless skinless chicken breast halves
- 3 tablespoons cream cheese
