To make the pesto, drop the garlic cloves into a running food processor and process until minced

Stop machine and add spinach, basil, green onion, pine nuts, Parmesan and salt

With machine running, add the olive oil to make a paste. Peel potatoes and quarter

Place potatoes in a large pot and cover with cold water

Continue to simmer until potatoes are tender, about 15 minutes

Force potatoes through a ricer into a large bowl and stir in the butter and enough cream to make moist rice mashed potatoes

CREAMY BASIL POTATO MASH
ingredients
- Pesto: 2 cloves garlic
- 1 cup fresh basil leaves
- 1 cup fresh spinach leaves
- 3 green onions
- 3 tablespoons pine nuts
- 1/4 cup freshly grated Parmesan
- 1/2 teaspoon salt
- 1/3 to 1/2 cup extra-virgin olive oil
- 3 pounds russet potatoes
- 4 tablespoons unsalted butter
- 3/4 to 1 cup heavy cream, heated
- Salt and pepper to taste
