Remove cilantro, parsley and oregano leaves from stems and mince

Peel and mince garlic

Heat oil in a large saucepan over medium heat

Add garlic and saute until golden, being careful not to burn

Add rice and stir 2 minutes or until glossy

Add broth and lime juice and salt and bring to a boil

Stir; reduce heat and cook, covered, until rice is tender, 18 to 22 minutes. Turn off heat and let stand 5 minutes

Add herbs and lime zest and fluff with a fork.
TOASTED GARLIC RICE WITH FRESH HERBS

- 1/2 bunch fresh cilantro
- 1/2 bunch Italian parsley
- 4 sprigs fresh oregano
- 12 cloves garlic
- 2 tablespoons vegetable oil
- 1-1/2 cups long grain white rice
- 3 cups chicken broth
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
- 1-1/2 teaspoons grated lime zest
