Finely chop onion and carrot

Peel garlic and mince

Cut chili in half and scoop out seeds and membrane and finely mince

Heat 1 tablespoon oil in a nonstick skillet over medium high heat

Add onion, carrot, garlic and chili and saute until tender, 5 minutes

Mash beans and stir in onion mixture, 1/2 cup salsa, flour and spices

Chill 30 minutes

Stir together mayonnaise and adobo sauce and spread on bottom bun

Shape bean mixture into 8 patties

Place on a parchment lined baking pan and brush with oil

Bake at 400 degrees for 15 minutes

Serve on buns and top with remaining salsa.
BLACK & PINTO BEAN BURGERS
ingredients
- 1/2 medium onion
- 1/2 carrot, peeled
- 2 cloves garlic
- 1 jalapeño chili
- 3 tablespoons olive oil
- 1 (15-ounce) can black beans,
- rinsed and drained
- 1 (15-ounce) can pinto beans,
- rinsed and drained
- 1 cup prepared salsa, medium or mild
- 2 tablespoons self-rising flour or Bisquick
- 1/2 teaspoon salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 cup mayonnaise
- 2 to 3 teaspoons adobo sauce from
- canned chipotle chilies
- 8 whole grain buns, toasted
