    Finely chop onion and carrot

  • 2

    Peel garlic and mince

  • 3

    Cut chili in half and scoop out seeds and membrane and finely mince

  • 4

    Heat 1 tablespoon oil in a nonstick skillet over medium high heat

    Add onion, carrot, garlic and chili and saute until tender, 5 minutes

    Mash beans and stir in onion mixture, 1/2 cup salsa, flour and spices

  • 7

    Chill 30 minutes

  • 8

    Stir together mayonnaise and adobo sauce and spread on bottom bun

  • 9

    Shape bean mixture into 8 patties

  • 10

    Place on a parchment lined baking pan and brush with oil

  • 11

    Bake at 400 degrees for 15 minutes

    Serve on buns and top with remaining salsa.

ingredients

  • 1/2 medium onion
  • 1/2 carrot, peeled
  • 2 cloves garlic
  • 1 jalapeño chili
  • 3 tablespoons olive oil
  • 1 (15-ounce) can black beans,
  • rinsed and drained
  • 1 (15-ounce) can pinto beans,
  • rinsed and drained
  • 1 cup prepared salsa, medium or mild
  • 2 tablespoons self-rising flour or Bisquick
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 cup mayonnaise
  • 2 to 3 teaspoons adobo sauce from
  • canned chipotle chilies
  • 8 whole grain buns, toasted
