    Cut tofu into Batonnet strips

  • 2

    Peel and cut carrot into julienne strips

  • 3

    Cut red pepper into julienne strips

  • 4

    Slice green onions diagonally in thin strips. Cook spaghetti in a large pot of boiling water

    Drain and toss with sesame oil and sesame seeds

  • 6

    Immediately toss with tofu, carrots and red peppers, allowing them to warm and soften slightly. Combine all dressing ingredients in blender or food processor and puree

  • 7

    Toss with noodles and sprinkle with green onions.

CHINESE COLD NOODLES

ingredients

  • 8 ounces baked tofu, any flavor
  • 1/2 carrot
  • 1 small red bell pepper
  • 2 green onions
  • 1/2 pound spaghetti
  • 1 tablespoon Asian sesame oil
  • 1 tablespoon toasted sesame seeds
  • Dressing:
  • 2 slices peeled fresh ginger
  • 1/4 bunch cilantro
  • 1 clove garlic
  • 2 tablespoons rice vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
