Cut red peppers into Batonnet strips

Slice the onion lengthwise into thin strips

Peel garlic and mince

Peel yams and cut in half lengthwise

Then cut across into 1/4 inch thick half moons

Trim snow peas and mince cilantro leaves

Heat oil in a 4 quart pot over medium high heat

Add the bell peppers and onion and cook until tender and beginning to brown, about 5 minutes

Stir in the garlic and curry paste and cook, stirring 1 minute. Add yams, coconut milk and water and simmer, covered, stirring occasionally, until potatoes are almost tender, about 5 minutes

Add snow peas and simmer, uncovered, until sauce is slightly thickened

Stir in cilantro and serve over rice.
THAI YAM AND PEPPER CURRY
ingredients
- 2 red bell peppers
- 1 medium onion
- 4 cloves garlic
- 2 medium orange fleshed yams
- 1/2 pound snow peas
- 4 sprigs fresh cilantro
- 1 tablespoon vegetable oil
- 1 to 1-1/2 tablespoons Thai green curry paste
- 1 (14-ounce) can unsweetened coconut milk
- 1/2 cup water
- Cooked jasmine rice
