Chop onion

Trim ends from green beans and cut in half crosswise

Trim ends from zucchini and cut into 1-inch thick slices

Peel potatoes and cut into 1-inch cubes

Remove leaves from parsley and chop

Heat oil in a large nonstick skillet over medium high heat

Add onion and cook 5 minutes

Add green beans and cayenne and saute until onions are tender, about 3 minutes

Add zucchini, potatoes and parsley. Pour on tomatoes and their juices and bring to a boil

Reduce heat, cover and simmer until potatoes are tender stirring frequently, about 45 minutes

Season to taste with salt and pepper

Serve in bowls topped with feta cheese.
GREEK GREEN BEAN, ZUCCHINI AND POTATO STEW
ingredients
- 1 medium onion
- 1 pound fresh green beans
- 1/2 pound medium zucchini
- 1/2 pound russet potatoes
- 1 small bunch Italian parsley
- 1/4 cup olive oil
- 1/4 teaspoon cayenne pepper
- 1 (28-ounce) can diced Italian-style tomatoes
- 1/2 cup crumbled feta cheese
