Finely dice the onion, red and yellow peppers

Peel and mince the garlic

Remove leaves from dill and parsley sprigs and mince

Heat 1 tablespoon oil in a medium skillet and cook the onion, peppers and garlic until tender

Cool

Bring water to a boil in a medium saucepan and stir in couscous and a pinch salt

Remove from heat and let stand, covered, 10 minutes

Fluff couscous and toss in onion mixture, feta, flour, eggs, dill, parsley, salt and pepper to taste

Heat 1 tablespoon oil in a nonstick skillet over medium high heat

Drop couscous mixture in 1/3 cup mounds and press slightly to form 3 inch cakes

Cook 3 minutes and turn and cook another 3 minutes or until golden and cooked through

Repeat with remaining oil and couscous.

- 1 small red onion
- 1 red bell pepper
- 1/2 yellow bell pepper
- 2 cloves garlic
- 3 sprigs fresh dill
- 3 sprigs Italian parsley
- 2-1/2 cups water
- 1 cup couscous
- 4 tablespoons olive oil
- 6 ounces crumbled feta cheese
- 1/2 cup flour
- 2 eggs, lightly beaten
