Cut yellow peppers into julienne strips

Coat steak on both sides with Steak Rub

Remove and set aside to cool slightly. Slice into thin strips across the grain

- 2 yellow bell peppers
- 3 tomatoes
- 1-1/2 pounds beef top sirloin, 1-inch thick
- 1/4 cup purchased Steak Rub
- 2 (6-ounce) bags mixed baby greens
- 3/4 cup crumbled blue cheese
- Dijon Vinaigrette:
- 2 tablespoons minced green onion
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 teaspoons Dijon mustard
