    Cut yellow peppers into julienne strips

  • 2

    Cut tomatoes lengthwise into wedges

  • 3

    Coat steak on both sides with Steak Rub

  • 4

    Let stand 30 minutes

  • 5

    Grill steak 5 to 6 minutes per side

    Remove and set aside to cool slightly. Slice into thin strips across the grain

    Finely mince the green onions

  • 8

    Whisk together Vinaigrette ingredients and toss with lettuce and yellow peppers

    Mound salad on serving plates and top with steak slices, blue cheese and tomatoes.

  • 2 yellow bell peppers
  • 3 tomatoes
  • 1-1/2 pounds beef top sirloin, 1-inch thick
  • 1/4 cup purchased Steak Rub
  • 2 (6-ounce) bags mixed baby greens
  • 3/4 cup crumbled blue cheese
  • Dijon Vinaigrette:
  • 2 tablespoons minced green onion
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
