Peel and mince garlic and ginger

Trim pork of all fat and silverskin

Slice pork lengthwise into 3 long thin strips

Mix the garlic, ginger, 1/2 the green onions, hoisin, chili paste, red wine and pepper. Remove and reserve 2 tablespoons

Pour remaining marinade over the pork and let stand 45 minutes

Grill pork 4 to 5 minutes per side

Cut across into thin strips. Stack basil leaves and cut into julienne strips

Cut cabbage into thin strips

Peel carrots and cut into julienne strips

Combine reserved 2 tablespoons marinade with fish sauce, vinegar and sugar

Toss with slaw and pork.

ingredients
- 1 head garlic
- 2 inch piece fresh ginger
- 6 green onions, divided use
- 1 pork tenderloin
- 1/2 cup hoisin sauce
- 2 tablespoons chili paste with garlic
- 1/2 cup red wine
- 1 teaspoon freshly ground pepper
- Slaw: 1 small bunch basil
- 1 small head Napa cabbage
- 2 carrots
- 1 cup bean sprouts
- 1/2 cup fish sauce
- 1/2 cup rice wine vinegar
- 1-1/2 teaspoons sugar
