    Peel mangoes and cut into medium dice

    Peel avocados and cut into medium dice

  • 3

    Rinse avocados in a colander to retard discoloration. For dressing, peel garlic and mince

    Whisk garlic with orange and lime juices, zest, honey and soy sauce

  • 5

    In a medium bowl combine the chicken, mango and avocado. Toss with 1/2 cup dressing

  • 6

    Toss greens with remaining dressing and divide among six plates

  • 7

    Top with chicken mixture and a sprinkling of cashews.

ingredients

  • 2 large firm ripe mangoes
  • 2 large avocados
  • 4 cups cooked diced chicken
  • 10 ounces mixed baby greens
  • 3/4 cup toasted cashews
  • Dressing:
  • 2 cloves garlic
  • 3/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon grated orange zest
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
