Coarsely chop the lettuce and place in a large bowl

Cut the red pepper, red onion and fennel into medium dice and add to lettuce

Coarsely chop the olives and shrimp and add to lettuce

For dressing, remove oregano leaves from stems and chop to make 1 tablespoon

Peel and mince garlic and combine with oregano, olive oil and vinegar

Season to taste with salt and pepper and toss with salad

GREEK CHOPPED SALAD WITH SHRIMP
ingredients
- 1 large head romaine lettuce
- 1 red bell pepper
- 1 medium red onion
- 1 medium fennel bulb
- 1/4 cup pitted Kalamata olives
- 1/2 pound cooked medium shrimp
- Dressing:
- 3 sprigs fresh oregano
- 1 clove garlic
- 6 tablespoons olive oil
- 3 tablespoons white wine vinegar
