    Thinly slice the onion and place in a small bowl

    Cover with water and stir in the vinegar

    Let stand at least 10 minutes and then drain well

    Coarsely chop the lettuce

  • 5

    Cut the red pepper and fennel into medium dice

    Slice the olives

  • 7

    Stack the salami slices and cut into julienne strips

  • 8

    For dressing, whisk all ingredients in a small bowl

    Season to taste with salt and pepper

  • 10

    Combine all salad ingredients in a large bowl and toss with dressing

    Serve immediately.

  • 1 medium red onion
  • 2 tablespoons white wine vinegar
  • 1 large head romaine lettuce
  • 1 red bell pepper
  • 1 fresh fennel bulb
  • 8 ounces pitted kalamata olives
  • 2 ounces thinly sliced Italian dry salami
  • 1 (15-ounce) can garbanzo beans, rinsed and
  • drained
  • 1/2 cup feta cheese, crumbled
  • Dressing:
  • 6 tablespoons extra-virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
