Cut the red peppers into medium dice

Chop the red onion

Drain the olives and cut into slivers lengthwise

Remove dill leaves and mince

Remove chicken from bones and cut into medium dice

In a large bowl toss together the pasta, peppers, celery, onion, olives, dill and chicken

For dressing, whisk together the vinegar, lemon juice, mayonnaise, mustard and salt and pepper to taste

Slowly whisk in the olive oil

Add the dressing to salad and toss well.

ingredients
- 2 red bell peppers
- 4 stalks celery
- 1 red onion
- 1 (12-ounce) jar pitted Kalamata olives
- 1 bunch fresh dill
- 1 large cooked rotisserie chicken
- 1 pound penne, cooked and rinsed
- in cold water to cool
- 3 tablespoons white wine vinegar
- 1 tablespoon lemon juice
- 2 tablespoons mayonnaise
- 2 tablespoons Dijon mustard
- 2/3 cup olive oil
