Very thinly slice the cucumber and place in a medium bowl

If using the chili, remove seeds and membrane and finely dice

Toss with cucumbers. Combine vinegar, water, sugar and salt in a small saucepan

Bring to a boil, stirring constantly to dissolve the sugar

Pour hot liquid over the cucumber and let cool. Cover and refrigerate up to 2 days.

ingredients
- 1 hot house cucumber
- 1 red or green chili (optional)
- 1/2 cup vinegar
- 1/2 cup water
- 1/2 cup sugar
- 1 teaspoon salt
