Peel jicama and cut into medium dice to make 2 cups

Cut red pepper and cucumber into medium dice

Slice green onions

Peel and section oranges (see page 30) and then chop into medium dice

Remove cilantro leaves and mince

Toss jicama, red pepper, cucumber, green onions and oranges in a large bowl

Whisk together the olive oil, lime juice, cilantro, salt and cayenne to taste

Stir dressing into salad and chill, covered, at least 1 hour but no longer than 8 hours.
JICAMA AND ORANGE CUCUMBER SALAD
ingredients
- 1/2 jicama
- 1 red bell pepper
- 1/2 hot house cucumber
- 2 green onions
- 2 oranges
- 4 sprigs cilantro
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
- Cayenne pepper to taste
