Peel jicama and slice into 1/4-inch thick slices

Slice green onions

Toss jicama with green onions and mandarin oranges in a large bowl

Cover and chill. To make the dressing, whisk together the oil, vinegar, honey, cumin and chili powder

Season to taste with salt and pepper

Just before serving toss dressing into salad. Serve on lettuce leaves.
MANDARIN ORANGE AND JICAMA SALAD
ingredients
- 1 small jicama
- 3 green onions
- 2 (11-ounce) cans Mandarin Oranges, drained
- 8 lettuces leaves
- Dressing:
- 1/3 cup vegetable oil
- 1/4 cup white wine vinegar
- 3 tablespoons honey
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
