    Remove seeds and membranes from peppers and cut into medium dice

    Chop enough onion to make 1/2 cup

  • 3

    Remove parsley leaves and chop

  • 4

    Stack basil leaves and chop

  • 5

    Peel and mince garlic

  • 6

    Combine the peppers, onion, parsley, basil, garlic and beans in a medium bowl

    Add the vinegar, oil and orange zest, tossing well

  • 8

    Season to taste with salt and pepper and let stand 30 minutes at room temperature or refrigerate up to 4 hours.

  • 2 large red bell peppers
  • 1 yellow bell pepper
  • 1 small red onion
  • 1/2 bunch Italian parsley
  • 6 leaves fresh basil
  • 2 cloves garlic
  • 1 (15-ounce) can black beans,
  • rinsed and drained
  • 1-1/2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon grated orange zest
