Peel and scrape out seeds from cucumber

Toss lettuce with cucumbers, radishes and tomatoes in a salad bowl. For dressing, quarter shallots

Peel garlic

Mix both together in the food processor Add the vinegar, mustard and 4 ounces gorgonzola

Puree until smooth

Add the olive oil and process until smooth

Season with salt and pepper

Toss salad with about 1/2 cup dressing or as needed. Serve topped with remaining gorgonzola.
MIXED GREENS AND CUCUMBER SALAD WITH GORGONZOLA

- 1 small cucumber
- 1 bunch radishes
- 2 tomatoes
- 2 (6-ounce) bags mixed baby greens
- 2 ounces Gorgonzola cheese, crumbled
- Dressing:
- 2 small shallots
- 3 cloves garlic
- 1/4 cup red wine vinegar
- 2 tablespoons Dijon mustard
- 4 ounces gorgonzola cheese, crumbled
- 3/4 cup extra-virgin olive oil
