Peel garlic and mince

Remove leaves from cilantro stems and mince to make 1/2 cup

Stir garlic and cilantro into lime juice, marmalade, olive oil and soy sauce in a large bowl

Remove 1/3 cup to a small bowl and set aside

Add shrimp to marinade in large bowl

Cover and refrigerate for 2 hours

Thread shrimp on skewers and grill for 4 minutes per side or until cooked through

Remove shrimp to a platter and drizzle with reserved marinade.

- 1 bunch cilantro
- 1/2 cup fresh lime juice
- 1/4 cup orange marmalade
- 1/4 cup olive oil
- 1 tablespoon soy sauce
- 1/2 teaspoon crushed red pepper flakes
- 1 pound extra-large shrimp, cleaned
