Remove leaves from cilantro stems and mince

Place in a small bowl and set aside

Peel and mince garlic and chop onion to make 1/3 cup

Place garlic and onion in a medium bowl

Quarter tomatoes and remove seeds

Slice lengthwise and then into batonnet dice

Add to onions

Pat roasted peppers dry with paper towels and dice

Coarsely chop the shrimp and add to onions along with peppers and chilies

Add the lime juice, rice vinegar, oil, cumin and chili powder to the cilantro and combine well

Season to taste with salt and pepper and stir into the shrimp

Serve with chips for dipping.
SHRIMP SALSA DIP
ingredients
- 3 sprigs fresh cilantro
- 3 cloves garlic
- 1/2 small onion
- 6 plum tomatoes
- 1 (7-ounce) jar roasted red peppers
- 1/2 pound cooked medium shrimp
- 1 (4-ounce) can diced green chilies
- 2 tablespoons fresh lime juice
- 2 tablespoons rice vinegar
- 1/3 cup vegetable oil
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 bag tortilla chips
