Refrigerate covered for 2 hours

Grill shrimp 3 to 4 minutes per side

Peel and slice and then mince ginger

Stir into chili paste, rice vinegar, sugar and sesame oil

Cover and refrigerate until serving time and up to 24 hours. Pile grilled shrimp on a platter around a bowl of the Chili Dipping Sauce

- 4 sprigs cilantro
- 4 cloves garlic
- 2 tablespoons rice vinegar
- 2 tablespoons Asian sesame oil
- 2 tablespoons soy sauce
- 1-1/2 pounds extra-large raw shrimp
- Chili Dipping Sauce:
- 1-inch piece ginger root
- 2 tablespoons chili paste with garlic
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon Asian sesame oil
- 3/4 cup mayonnaise
