    Peel and mince ginger

    Cover and set aside

  • 3

    Cut peaches into medium dice

  • 4

    Cover and set aside. Finely chop the onion

  • 5

    Heat the oil in a medium saucepan and add the onion and sugar

  • 6

    Cook, until onion is golden and sugar caramelizes, stirring often, about 6 minutes. Stir in wine, soy sauce, balsamic vinegar, ginger and pepper

  • 7

    Bring to a boil and cook 1 minute

  • 8

    Remove from heat and stir in peaches.

  • 1-1/2-inch piece fresh ginger
  • 1 (16-ounce) can sliced peaches, drained
  • 1 medium onion
  • 1 tablespoon vegetable oil
  • 5 tablespoons sugar
  • 1-1/2 cups dry red wine
  • 3/4 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon pepper
