JALAPENO KETCHUP

    Peel tomatoes and cut in half crosswise

    Squeeze out the seeds and cut into medium dice and place in a large saucepan

    Chop the onion and add to tomatoes

  • 4

    Trim ends from jalapenos and cut in half lengthwise

  • 5

    Scoop out seeds and membrane and finely dice

  • 6

    Add to tomatoes

  • 7

    Peel and mince garlic and add to tomatoes with all the remaining ingredients. Bring to a boil and then lower heat and simmer for 20 to 25 minutes, stirring occasionally

    Remove from heat and cool slightly before pureeing in the blender or food processor

  • 9

    Cool completely and then chill until serving time and up to 1 week.

JALAPENO KETCHUP

ingredients

  • 3 tomatoes
  • 1/2 onion
  • 2 to 3 jalapeno chilies
  • 2 cloves garlic
  • 1/2 cup red wine vinegar
  • 1/2 cup canned crushed tomatoes or
  • tomato sauce
  • 1/4 cup water
  • 1/4 cup golden brown sugar
  • 1/2 teaspoon chili powder
  • 2 to 3 teaspoons hot pepper sauce
  • Salt and pepper to taste
