Peel the papayas and cut in half

Scoop out the seeds and cut into large dice

Peel and chop the onion

Peel the garlic and ginger and mince

Combine all the ingredients in a large saucepan and bring to a boil

Lower the heat and simmer, stirring occasionally, until the onions are tender, about 15 minutes

Cool to room temperature

Remove the cinnamon stick and puree in the food processor or blender until smooth

Sauce may be used immediately or refrigerated up to 2 weeks.

- 2 papayas
- 1 medium red onion
- 2 cloves garlic
- 1/2-inch piece fresh ginger
- 1 cup red wine vinegar
- 1/2 cup golden brown sugar
- 1/4 cup dried cranberries
- 1 stick cinnamon
- 1/2 teaspoon salt
