PEACH CHUTNEY

    Peel peaches, remove pits and cut into large dice

    Place in a large saucepan

  • 3

    Remove seeds and membrane from red bell pepper and cut into medium dice

  • 4

    Chop the onion and add to peaches along with red pepper

  • 5

    Remove stem end from chili

  • 6

    Cut in half lengthwise and remove all seeds and membrane

  • 7

    Finely mince the chili and add to the peaches. Peel and mince the garlic and ginger and add to the peaches

  • 8

    Stir in all the remaining ingredients and bring to a boil

  • 9

    Lower heat and simmer, stirring occasionally, until fruit and vegetables are tender and sauce reaches a jam-like consistency

  • 10

    Cool to room temperature and refrigerate up to 1 week.

  • 1-1/2 pounds ripe fresh peaches
  • 1/2 red bell pepper
  • 1/2 medium onion
  • 1 large jalapeno chili
  • 4 cloves garlic
  • 1-inch piece fresh ginger
  • 1/2 cup golden brown sugar
  • 1/2 cup white sugar
  • 1/2 cup cider vinegar
  • 1/3 cup golden raisins
  • 1/2 teaspoon salt
