Peel and core apple and cut into large dice

Peel and chop the onion and place in a large saucepan with the apple

Mince the crystallized ginger and add to the apple along with the thawed mango cubes and all the remaining ingredients

Bring to a boil and then lower the heat and cook, stirring occasionally, until the fruit is tender and mixture has a jam-like consistency

Cool to room temperature and then refrigerate up to 1-1/2 weeks.

- 1 Granny Smith apple
- 1 small onion
- 4 slices crystallized ginger
- 1 (16-ounce) bag frozen mango cubes, thawed
- 3/4 cup dried cranberries
- 3/4 cup sugar
- 1/2 cup cider vinegar
- 3/4 teaspoon yellow mustard seeds
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
