Peel papaya, cut in half and scoop out seeds

Cut into large dice

Peel mango and cut away from pit

Cut flesh into large dice

Peel and core apple and cut into large dice

Remove seeds and membrane from red bell pepper and cut into medium dice

Combine fruit and vegetables in a large saucepan. Mince the crystallized ginger and add to the saucepan along with all the remaining ingredients

Bring to a boil and then lower heat and cook, stirring occasionally, until vegetables are cooked and mixture has a jam-like consistency

Cool to room temperature and then refrigerate up to 2 weeks.
PAPAYA-MANGO CHUTNEY
ingredients
- 1 papaya
- 1 mango
- 1 large Granny Smith apple
- 1 small onion
- 1/2 red bell pepper
- 4 slices crystallized ginger
- 1/2 cup golden raisins
- 3/4 cup sugar
- 3/4 cup cider vinegar
- 1 teaspoon yellow mustard seeds
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
