Set each cob of corn in the center of a dish towel and cut down the sides to remove the kernels

The towel will keep the corn from flying too far

Heat the oil in a large nonstick skillet over medium high heat and saute the corn until it is deep golden brown, about 5 minutes

Remove corn to a large bowl and cool. Peel and cut mangos from pits

Cut mango into large dice and toss with corn

Slice green onions and add to corn. Remove leaves from cilantro stems and mince

Peel garlic and mince and add with cilantro to corn. Dice roasted red pepper and toss into corn with lime juice and salt to taste

Serve immediately or let stand up to 2 hours. Makes 3 cups.
FRESH MANGO CORN SALSA
ingredients
- 3 ears fresh yellow corn
- 2 tablespoons olive oil
- 2 fresh ripe mangos
- 4 green onions
- 1/2 bunch cilantro
- 2 cloves garlic
- 1 jarred roasted red pepper
- 3 tablespoons fresh lime juice
- Salt to taste
