SPICY MANGO SALSA

    Peel and cut mango away from the pit

  • 2

    Cut mango into large dice and place in a medium bowl

  • 3

    Dice the red onion and add to the mango. Wearing gloves, remove seeds and membrane from chili and finely mince

  • 4

    Remove leaves from cilantro and mince leaves

  • 5

    Toss chili and cilantro with mangos

  • 6

    Add lime juice, cumin, salt and white pepper to taste

  • 7

    Let stand at room temperature 1 hour or refrigerate up to 2 hours before serving.

  • 1 large or 2 small ripe mangos
  • 1/4 red onion
  • 1/2 Scotch bonnet or habanero chili
  • 3 sprigs cilantro
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon ground cumin
  • Salt and white pepper to taste
