Dice enough red onion to make 1/2 cup

Cut the red bell pepper into medium dice

Finely mince the serrano chili, seeds and all

Heat the oil in a small skillet and saute the onion, red pepper and chili until wilted, about 3 minutes. Scrape into a medium bowl and cool. Remove leaves from cilantro and mince leaves

Peel the papaya and cut in half

Scrape out the seeds and cut into a large dice

Toss cilantro and papaya with cooked vegetables

Add lime juice and salt to taste and let stand 30 minutes or refrigerate up to 3 hours.

- 6 sprigs cilantro
- 1 large papaya
- 2 tablespoons fresh lime juice
- Salt to taste
