Peel and mince garlic cloves and place in a medium bowl. Remove stem, membrane and seeds from the chili

Cut in small dice and add to garlic

Cut tomatoes in quarters lengthwise, remove seeds and medium dice

Add to garlic

Remove cilantro leaves from stems and mince cilantro

Add to garlic. Toss vegetables and add the fresh lime juice, vegetable oil and salt and pepper to taste

Let stand at room temperature for at least 30 minutes and up to 2 hours before serving.

- 1/2 serrano chili
- 6 plum tomatoes
- 6 sprigs cilantro
- 1 tablespoon fresh lime juice
- 1 tablespoon vegetable oil
- Salt and pepper to taste
