Cajun Orange Butter Sauce
ingredients
- 1/2 cup unsalted butter
- 1 tablespoon dry vermouth
- 1 tablespoon fresh orange juice
- 1 tablespoon grated orange rind (zest)
- 2 cloves garlic, minced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Cajun Creole Rub (page 129)
- 1/4 teaspoon hot pepper sauce
