    Melt butter in a medium saucepan

    Add vermouth, orange juice and zest, garlic, Worcestershire, Cajun-Creole Rub and hot sauce

    Whisk to combine well and cook until just heated through. Yield: 1/2 cup SUGGESTED USE: This hot butter sauce is superb over tuna steaks or other fish fillets

    It is also tasty spooned over boneless chicken breasts.

Cajun Orange Butter Sauce

ingredients

  • 1/2 cup unsalted butter
  • 1 tablespoon dry vermouth
  • 1 tablespoon fresh orange juice
  • 1 tablespoon grated orange rind (zest)
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Cajun Creole Rub (page 129)
  • 1/4 teaspoon hot pepper sauce
