    Mix scallops, sherry, salt and pepper in large pan

    Cover, and slowly bring to boil over low heat

    Simmer for 5 minutes

    Drain liquid and set aside

  • 5

    Chop scallops and set aside

  • 6

    Pour mixture into buttered casserole dish, sprinkle on bread crumbs

  • 7

    Heat in broiler until golden brown

  • 8

    Garnish with dill or parsley

  • 9

    Serves 4 to 6.

  • 1 1/2 lbs. scallops
  • 1 1/2 cups dry sherry
  • salt and pepper
  • 2 TB canola oil
  • 1 TB butter
  • 1 TB flour
  • 1 cup yogurt
  • 1/2 cup milk
  • 1/2 cup chopped mushrooms
  • 2 TB grated Swiss cheese
  • 2 TB bread crumbs
  • fresh dill or parsley for garnish
