YOGURT FISH CAKES

    Saute pepper and onion in butter for 2 minutes

    Remove from heat and add fish, parsley and yogurt

  • 3

    Mix egg with mashed potatoes and pour half of potato mixture into baking dish

  • 4

    Spread all of fish mixture over potatoes

  • 5

    Top with remaining potatoes and garnish with chopped chives

  • 6

    Bake 15 to 20 minutes in 350 degree oven

    Serves 6.

YOGURT FISH CAKES

ingredients

  • 2 cups cooked fish
  • 1 green pepper, minced
  • 1 onion, minced
  • 2 TB butter
  • 1 TB minced parsley
  • 1 1/2 cups yogurt
  • 3 1/2 cups hot mashed potatoes
  • 1 egg, beaten chopped chives
