Melt butter in a pan and stir in flour

Cook for a couple of minutes without letting it brown

Stir in milk, yogurt, and wine

Simmer on low heat for 2 minutes

Add fish, shrimp, crab, scallops, scallions, and seasonings

Pour into pie pan and let cool. Thaw, roll pastry and cut out a narrow strip to line the pie pan edge

Moisten the pan lip with water and lay the strip along the edge

Use egg to damp- en the pastry strip and cover it and the pie with pastry

Mound the edge and make a slit in middle of pie for releasing heat pressure.

ingredients
- 1/4 cup butter
- 1/4 cup flour
- 1 1/4 cups milk
- 2/3 cup unflavored yogurt
- 2/3 cup white wine or chicken stock
- 3/4 lb cooked white fish, flaked
- 1/4 lb cooked shelled shrimp
- 1/4 lb cooked white crab meat
- 1/4 lb cooked scallops, diced
- 2 TB chopped scallions
- 1/4 tsp. curry powder (optional)
- salt to taste
- freshly ground black pepper to taste
- 3/4 lb frozen puff pastry
- 1 egg, beaten
