    Mix in blender all ingredients except seasonings. Blend until smooth

    Season to taste

    Pour soup mixture into serving bowl and chill cold before serving

AVOCADO GAZPACHO

ingredients

  • 4 1/4 cups light chicken stock
  • 1 medium onion, chopped
  • 1 small green pepper, deseeded and chopped
  • 1/2 cucumber, peeled and chopped
  • 1 large, ripe avocado, peeled, pitted and chopped
  • 1/4 cup tomatoes
  • 2/3 cup unflavored yogurt
  • 1 TB wine vinegar
  • salt to taste
  • freshly ground black pepper to taste
  • cayenne pepper to taste
