VANILLA YOGURT

    Split the vanilla bean lengthwise in half and heat with the milk

    Remove from heat just before boil- ing and let cool to 105 to 110 degrees F

  • 3

    Use a ther- mometer for accurate temperature

  • 4

    Take the vanil- la bean halves out

  • 5

    Add yogurt and sugar and stir lightly

  • 6

    Pour yogurt mix into containers with lids

  • 7

    Incubate in Food Dehydrator until firm, approxi- mately 6 to 10 hours

  • 8

    Refrigerate before serving

    Makes 4 1/4 cups.

  • 4 1/4 cups milk
  • 4 inch piece vanilla bean
  • 1/2 cup sugar
  • 1 tsp. unflavored yogurt
