    Pretreat and cure fish according to earlier direct- ions. Mix marinade ingredients together in a bowl

    Dip fish slices into marinade

  • 3

    Place dipped fish slices in layers in a bowl or dish

  • 4

    Pour remaining marinade sauce over fish

  • 5

    Cover tightly and let marinate in refrigerator for 6 to 12 hours

  • 6

    Rotate layers of fish occasionally. Place in dehydrator until dry

  • 7

    While fish is drying, blot excess oil with paper towel.

ingredients

  • Makes about 1/2 lb jerky
  • 1/2 cup soy sauce
  • 2 cups brown sugar
  • 2 TB ground pepper
  • 1 1/2 TB cayenne pepper
  • 1 TB garlic powder
  • 1 TB onion powder
  • 2 lbs sea bass, sword fish, cod, or salmon, boned and
  • skinned
