    Combine seasonings, add liquid and mix

    Combine with 2 lbs

    lean hamburger

    Mix by hand until thoroughly combined

    Place in refrig- erator for 6 to 8 hours. Using a rolling pin, roll out between two sheets of wax paper

    Cut into 1/2 to 1 inch wide strips. Place in dehydrator until dry

    While meat is dry- ing, blot excess oil with a paper towel.

P.J.s CAJUN HAMBURGER JERKY

ingredients

  • Makes about 1/2 lb. jerky
  • 2 whole bay leaves
  • 1 tsp. salt
  • 1 tsp. cayenne pepper
  • 1 tsp. freshly ground pepper
  • 1/2 tsp. white pepper
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground nutmeg
  • 1 TB. pepper sauce
  • 1 TB Worcestershire sauce
  • 3 tsp. minced garlic (optional)
  • 1/2 cup water
