    Mix marinade ingredients together in a bowl

    Dip meat slices into marinade

  • 3

    Place dipped meat in layers in a bowl or dish

  • 4

    Pour remaining marinade sauce over meat

  • 5

    Cover tightly and let marinate in refrigerator for 6 to 12 hours

    Rotate layers of meat occasionally. Place in dehydrator until dry

  • 7

    While meat is dry- ing, blot excess oil with paper towel.

LOUISE'S HOT JERKY

ingredients

  • Makes about 1/2 lb jerky
  • 1 cup water
  • 1/3 cup soy sauce
  • 1 TB red wine or dry sherry
  • 1/4 cup brown sugar
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 3/4 tsp. anise seed
  • 5 thin slices of fresh ginger
  • 1 tsp. onion powder
  • 1/8 tsp. ground cloves
  • 1/8 tsp. cayenne pepper
  • 3 small dried hot chili peppers, minced
  • 2 lbs round, flank steak ,or other lean cut meat
