Place the white and black peppercorns and mustard seeds in a spice grinder or blender and grind to a coarse powder

Stir warm water into wasabi powder until it's smooth, adding more water a bit at a time, if necessary

Let wasabi stand for 10 minutes

Stir wasabi into onions along with ground spices, sake, soy sauce and mirin

Use within 24 hours. Yield: 1/2 cup SUGGESTED USE: Sake and mirin are both Japanese rice wines

Sake is dry and is used served warm for dipping with a meal, while mirin is quite sweet and is usually used in cooking only

Try this spicy paste rubbed on flank steak or London Broil (4 hours), or even a beef top sirloin (4 hours)

- 2 tablespoons sake
- 2 tablespoons soy sauce
