CORN CHOWDER

    Refresh corn in 1 1/2 cups of water

    Allow to stand for at least 30 minutes

    Brown bacon in soup pot until crisp

  • 4

    Remove and drain

  • 5

    Brown onion in bacon fat until tender

  • 6

    Add onion to bacon

  • 7

    Discard all fat except for 2 tablespoons. Place undrained refreshed corn into soup pot

    Add 2 more cups of water

  • 9

    Boil for 45 minutes

  • 10

    If neces- sary, add more water to maintain volume

    Add diced potato and cook until tender

  • 12

    Combine pre measured milk, flour, salt, and pepper mixture with 2 1/2 cups water and mix well

    Add milk mixture to the pot and bring to a simmer, stir- ring occasionally

  • 14

    Add onions and crumbled bacon

  • 15

    Stir well

  • 16

    Serve with crackers or homemade bread

  • 4 strips bacon
  • 1 medium onion, chopped
  • 2 cups water
  • 1 medium potato, diced
  • 2 1/2 cups water
  • 2 cups nonfat dry milk
  • 1 TB flour
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
