Place soup bone in large saucepan and add water to cover

Bring to boil

Reduce heat and simmer 1 hour. Pour boiling water over dried vegetables just to cover

Soak 1 hour. Add diced vegetables, dried parsley, and season- ings, to the beef bone

Add the dried vegetables in their water to above mixture

Simmer 1 to 1 1/2 hours. Remove bone, dice meat, and return to pot

Season to taste and serve hot.
BEEF VEGETABLE SOUP
ingredients
- 1 meaty soup bone
- 1 cup ass't dried vegetables (corn, peas, beans)
- 1 large stalk celery, diced
- 2 carrots, diced
- 1 medium onion, diced
- 1 TB dried parsley
- 1 TB salt
- 1/4 tsp. pepper
